There is also a variation on Universal Design called Universal Instructional Design that covers the non-technology aspect. http://www.tss.uoguelph.ca/uid/

thanks a lot for these resources:  Skimmed through the pages at http://www.tss.uoguelph.ca/uid/ and found them very interesting.

"...by anticipating and planning for the diverse needs of potential users during the design process, the resulting product or outcome will better suit the needs of all users." (http://www.tss.uoguelph.ca/uid/uid-workbook-FTF.pdf p 1).
I am not really convinced that this is true for all pedagogical settings, nevertheless the approaches and methods outlined later in detail are worth having a look at (some technical aspects would probably need an update).
