Several of the activity modules support autolinking filters.

For example, you'll see automatic hyperlinks every time you mention the name of a resource in the current course such as Auto-linking, for example, or mention a glossary entry that may be published anywhere on the site, such as slasharguments.

However, if - for any reason - you do not want automatic hyperlinks to be created on a certain portion of a text, you can simply enclose this portion of the text in the <nolink></nolink> tag (of course, you have to do it in HTML source view, not in the rich-text editor).
